Low Fat Smokey Bacon and Pumpkin Pizza
Ingredients
1.Pumpkin, peeled and chopped: 400 grams
2.Plain pizza base: 300 grams
3.Red onion, sliced: 1 medium
4.Shortcut bacon, trimmed of rind and fat: 4 rashers
5.Old El Paso BBQ bacon salsa: ¾ cup
6.Low fat cheese, grated: 80 grams
7.Black olives in brine, pitted and sliced: 2 tablespoon
8.Roquette:1 handful
Preparation
Preheat the oven to about 200oC. Mix the onion and the pumpkin in a medium bowl. Bake the vegetables until they are tender or for about 20 minutes. Increase the temperature to 220oC. Now place the pizza base on the oven tray. Spread the salsa over it. Arrange the onion, the pumpkin and the bacon over the pizza. Sprinkle the olives and the grated cheese on the top. Now bake for another 15 minutes, till the cheese has melted and the base has turned crisp. Sprinkle some roquette and serve. This preparation will give you 4 servings.
